The full size convection oven is a part of most new restaurants and bakeries we help open. The full size ovens fit full size sheet pans and come in standard or bakery depth. So what is the difference between standard and bakery depth? Bakery depth allows the full size sheet pan to fit in either orientation. Since even the standard depth ovens fit full size sheet pans. far most restaurants and even most bakeries buy standard depth convection ovens such as the American Range MSD series. For smaller locations Moffat sells full size ovens in very compact sizes with small footprints. Moffat also sells a variety of smaller half size convection ovens.
All convection ovens come in both gas or electric versions. Gas is more popular due to the lower cost of ownership, but electric is very popular for locations without ventilation hoods. All but the smallest electric ovens come in 220 or 208V electric rather than 110V. Gas ovens come in either natural gas or propane, you simply specify your gas type at checkout.
