Salamanders are Gas broilers, typically mounted on a wall over the restaurant range, or to the range itself using a mounting kit. Legs can be added if needed. They differ from cheese melters in that they are more powerful and used for cooking rather than just heating and cheesemelting. You can buy salamanders with single control or dual controls, which allows you to heat each side separately. Most New York restaurants that we help open will add a Salamander to the order, usually these will be mounted directly above the range using a range or wall mounting kit.
