Commercial Cheesemelters are wall or range mounted broilers used for light cooking such as melting cheese, heating up subs and sandwiches, toasting. Cheese melters should not be expected to replace a full size broiler such as a salamander, which can be much more versatile and will give much greater control. However cheese melters will have big wide openings to allow for a wider variety of product to fit in, like breads. This wide opening will also allow more heat to escape, limiting its use cases.
At Kitchenall we tend to sell far more Salamanders than Cheesemelters, especially to our New York City restaurants, since a Salamander can do much of what a Cheese melter can do, and much more.
