Commercial Electric Convection Ovens offer the same performance of Gas convection, without the need for expensive Hoods and ventilation systems that are required by health departments for gas ovens. The electric convection ovens are physically identical in appearance but operate on 208V or 220V electric rather than gas. Popular electric convection ovens include the American Range MSDE-1 for those who want a traditional convection oven, and the Moffat E Series for those who want either a more compact full size oven, or a smaller half size oven.
Electric convection ovens almost all use 220V or 208 V (depending on your area). The reason for this is that 110V does not provide enough power to adequately heat up these units. Electric ovens available in 110V are only the smallest Moffat half size ovens.
